Mac and Cheese on your stove top, simple and easy!

For my friends at tudiabeties.com. In the chatroom there we talk about many issues dealing with diabetes. Last night a request from Josh T for an easy Mac and cheese…Can you feel the love!

Mac and Cheese on your stove top
serves 3-4
I like to add some cooked broccoli to this dish to add some fiber.

Ingredients:
8 ounces of pasta (shells, bow ties, penne, whatever you like.)
6 ounces of sharp cheddar cheese, shredded
6 tablespoons of butter
3 tablespoons of whole milk
salt to taste

Directions:
1) Bring a pot of water to a boil. Pinch of salt the water. Add the pasta and cook to a tender bite. Drain and return pasta to pan DO NOT RINSE!

2) Add the butter to the still-hot pasta, cover and allow to melt a bit. Add the cheese and milk and give it a good stir. Put the lid back on and let it sit a bit. Give it another stir-e-stir after a few minutes. All the ingredients should come together into a smooth sauce. Taste and season with more salt or pepper if needed. Serve it right away. How can you wait??
