Four Cheese Basil Pita Pizza

These low-carb pizzas are packed with flavor! They make a great after school snack and are super-easy to make. You can be creative and add grilled chicken, fresh tomatoes, green peppers or mushrooms.

Ingredients

6 whole wheat low-carb pita breads
8 ounces low fat cream cheese, softened
1 tablespoons skim milk
2-3 leaves of fresh basil or 1 teaspoon dried basil
1 can sliced olives, drained
1/2 cup shredded mozzarella cheese*
1/2 cup shredded provolone cheese*
2 tablespoons grated Parmesan cheese*

* If you would like lower fat, substitute low-fat cheese, and change nutritional counts accordingly.

Directions

Heat oven to 425 degrees F.
Place pita breads on ungreased large cookie sheet.
Mix cream cheese and milk until smooth.
Spread on pita breads to within 1/4 inch of edge.
Gently spread pesto over cream cheese.
Top with olives.
Sprinkle with cheeses.
Bake 7 to 12 minutes or until thoroughly heated and cheese is melted.
