Willow's Pasta of Love
Ingredients1 pound Whole-Wheat Penne
1/4 cup extra-virgin olive oil
1/4 cup Canola oil
1/2 half red onion, sliced
1/2 half green peppers, sliced
1 cup fresh portabella mushrooms, sliced
Salt and fresh cracked pepper, to taste
1 cup Roma tomatoes, diced
1/2 half green peppers, sliced
2-3 tablespoon Pesto Sauce
2 4-oz grilled chicken breast sliced or 12 cooked shrimp
Directions
Cook pasta in a large pot of boiling water until tender yet still firm to the bite, stirring occasionally. Drain and return the pasta to the pot.
Heat the olive oil and canola oil in a heavy skillet over medium heat. Add onions, peppers and mushrooms, and sautè until tender. Salt and pepper to taste.
Combine mushroom mixture with the pasta. Add Roma tomatoes, toss to mix, and add Pesto Sauce. Add grilled chicken or shrimp before serving.
