Instant Pot Short Ribs

What’s in it-
6 -pieces bone-in short ribs
3/4 cup red wine (Cabernet Sauvignon)
½ cup beef broth
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
1 tablespoon fish sauce
1 tablespoon regular soy sauce
8 cloves garlic , crushed and sliced
1 large onions, sliced thick
10-15 baby carrots, whole
2 celery stocks , chopped
1 tablespoon canola oil
2 bay leaves
1 tablespoon dried thyme
Sea salt and ground black pepper to taste
2.5 tablespoons cornstarch
3 tablespoons cold water
Let’s Put it Together-
Brown Short Ribs in Instant Pot: Heat up Instant Pot using Sauté More. Wait until it says HOT, Add 1 tbsp canola oil in Instant Pot. Season one side generously with salt and black pepper. Add in 3 pieces of short ribs, then brown each side for 4 minutes, top, bottoms and sides.
1. Saute Onion & Garlic: Set aside the browned short ribs. Add in sliced onions, and saute until soften about 5 minutes. Add garlic, and sauté until fragrant.
2. Add the carrots and celery: Add in the baby carrots, celery, a pinch of dried thyme, and 2 bay leaves, then sauté for 2 minutes.
3. Deglaze Instant Pot: Pour 3/4 – cup red wine in Instant Pot and stir the brown bits that are stuck to the bottom (pure golden flavor) off the bottom of the pot with a wooden spoon.
4. Pressure Cook Short Ribs: Add 1 tbsp light soy sauce, 1 tbsp fish sauce, 1 tbsp brown sugar, 3 tbsp balsamic vinegar, and 3/4 cup beef stock in Instant Pot. Add in the browned short ribs.
Then, pressure cook: High Pressure 45 minutes + Natural Release 15 minutes
