Watermelon Salad w/ Feta, Cucumber, and Herbs

The Ingredients 

Honey-Lemon Dressing:

2 T fresh lemon juice

1 t dijon mustard

2 T honey (or maple syrup)

1/4 cup olive oil

1/2 t kosher salt

1/4 t black pepper

Watermelon Salad:

½ watermelon peeled, cut into cubes2 cupfuls of cubed cucumbers

10 fresh mint leaves

chopped10 fresh basil leaves

½ cup crumbled feta cheese

Drizzle of balsamic vinegar glaze

Instructions 

1.In a small bowl, whisk together the honey, lemon juice, olive oiland pinch of salt. Set it aside.

2.In a large bowl, combine the watermelon, cucumbers, and freshherbs.

3.Top the watermelon salad with the dressing and gently toss tocombine.

Top with the feta cheese and drizzle of balsamic viinegarglaze. Serve and Enjoy!


Tips for Choosing a Juicy Watermelon

  • Round watermelons tend to be sweeter.

  • Dark yellow "field spots" mean more flavor than light ones.

  • More webbing (thin lines on the skin) suggests more sweetness.

  • Shiny watermelons are less ripe; pick duller ones.

The field spot should be a yellowish creamy color
